Use cake flour instead of all-purpose, it has more moistureand will therefore puff more (cookies will be softer and paler, though).Additionally, add in 1 to 2 tablespoons flour can sometimes cause cookies topuff more. Use bread flour for drier, crispier cookies (they will bedarker, too). Bread flour absorbs more liquid from the recipe than any othertype of flour. The edges should beslightly golden but the middle will still look slightly raw. 这个就要盯紧点了,比如设定9分钟的,在7-8分钟的时候就要盯着,一旦发现边缘已经开始BROWN了,就拿出来,尽管中间看上去还不是完全DONE 的样子,放凉后就会好的。这个要试验几次才会有感觉,因为曲奇大小、烤箱温度等都不一样,很难完全COPY。

还有人说额外加些 pudding mix 也可以使其软些,我不喜欢太甜,而且也不喜欢再增加一些添加剂,所以没有试过这个方法。
